Although the deer that produce our meat are technically farmed, they're not managed or handled in the way domesticated livestock like sheep, cattle or pigs are. They're treated and respected as wild animals at all times, and live in an environment and eat a diet that reflects their natural way of life. They browse trees and hedges as well as grazing grass and undergrowth. When necessary, they're supplemented with hay and organically grown feed crops. Deer are exceptionally sensitive and prone to stress, so intervention is kept to a minimum.
We've blended our finely ground venison with a mix of herbs and spices that brings out the natural flavours of the meat. Because venison has very little fat, it's important to cook your venison sausages quickly, without letting them dry out. To avoid this, you can brown your sausages in a hot pan, then let them bubble away in a rich red-wine gravy to keep them moist as they cook through. Traditional flavours like juniper, redcurrant and rosemary are perfect partners for the delicacy of the venison. And a spoonful of rich parmesan mash doesn't go amiss either.
