Venison is a characterful meat that has a long history on British tables. It may have been the preserve of the rich and royal for many centuries, but it's growing in popularity now. Even when they're 'farmed', deer very much remain wild animals. They're not domesticated in the way sheep, pigs and cattle are, so that has to be a major consideration for farmers who breed deer for venison. The welfare of the animals is of the utmost importance, and to keep them healthy and stress-free they must be given the liberty to roam and follow their natural instincts. Their diet of grass is supplemented only when necessary with hay, peas and barley grown on the farm. So the meat they produce is clean and untainted by chemicals.
When cooking your organic venison burgers, remember to take it easy. To ensure this lean meat stays succulent, give it a quick cook over white-hot coals or in a sizzling griddle pan. Serve simply with some peppery rocket and a dollop of creamy coleslaw. Add a couple of crisp slices of streaky bacon for an indulgent treat.
