There's a clue in the name of this cut: organic tenderloin venison fillet is, as it says, a meltingly tender piece of meat. Cut from just below the spine on the deer carcass, the tenderloin is a single muscle that nestles under the cut known as the saddle. Comparatively speaking, this is a muscle that's had a fairly leisurely life, which is why the texture is so soft and yielding. With only the slightest marbling of fat, this is a lean cut that will reward light-handed cooking with delicate but distinctive flavour.

All of Coombe Farm Organic's venison comes from a herd of deer that live as wild on an expansive Somerset estate. It's a symbiotic relationship between the deer and the land: they eat grass, browse hedges and nibble on trees, keeping undergrowth under control and helping to sustain diverse plant life. Animals are culled when the herd becomes too large or when there are too many males. Technically the deer are 'farmed', but it's farming with the lightest of touches, allowing the herd to live exactly as it would in the wild, without intervention unless absolutely necessary.

Your organic tenderloin venison fillet will yield the most delicious results when cooked rare or medium rare. The very low fat content means it will dry out if overdone, so be quick and deft. Simply rub a drop of oil over the tenderloin and then sear it in a very hot pan until the outside is well browned. Then pop it into an oven preheated to 170° for 5 to 7 minutes. To test if it's cooked, give the tenderloin a little squeeze. The softer it feels, the rarer it is. Let it rest, wrapped in foil, for at least 5 minutes before slicing into medallions and serving with some celeriac mash, buttered greens and a drizzling of port gravy.

  • We deliver all around mainland Britain, excluding the Highlands and Islands. The delivery will be made within 24 hours upon placing the order or on a weekly-schedule for subscriptions.

    We can deliver to you Tuesday to Saturday, providing you place your order Monday to Friday, pre 12pm.

    We will pick, pack and deliver your box the Next Day or on the day you have requested.

    Orders placed Monday to Friday, after 12pm, will be picked, packed and delivered 1 working day later.

    Orders placed on a Saturday or Sunday, will be picked and packed on the Monday for delivery on the Tuesday or on the day you have selected.

    For every order, we'll send you a text message on the morning it is due to be delivered.

  • We have a minimum order of £30 simply for sustainability reasons in order to minimise packaging, delivery and the environmental footprint.

  • If you spend over £80 your delivery will be free of charge. For orders under £80 we have to charge for delivery. Please have a look at the details:

  • No. You can leave a message with your order telling us where you would like to have your box placed. It would be best placed somewhere cool or at least in the shade – especially during the hotter months of the year. Our products will stay at the same temperature for up to 40 hours, so just make sure that you can pick up your order within that time.

    Our couriers will send you a text message or email, which ever you prefer, giving you an hour slot when your box will arrive. If that doesn’t suit you, some options will be provided to make your delivery more convenient.

  • Our products will stay frozen at the same temperature for up to 40 hours. Simply put them in your freezer after delivery or in your fridge if you want to defrost them and use them within the next few days.

    To control the temperature in your box we use ice packs. When soaked in fresh water the pad can be frozen and will retain a low temperature for a long period of time. Reuse it for your picnic or a day out!

    Natural sheep’s fleece provides insulation for your order for up to 40 hours and can be reused for planting, filling cushions, arts and crafts and so much more. There are no limits to your creativity!

Product FAQs

  • We deliver our organic produce Tuesday – Saturday. Delivery charges for weekday delivery are £3.95 and Saturday delivery £6.95. You can also select pre-12 delivery option which is at a higher rate of £6.95 for weekday delivery and £8.95 for Saturday. If you spend over £80 you will receive free weekday delivery. The cut off period to get your order the next day is 12pm any order placed after that time will be delivered after 2 days. For example if you order after 12pm on Tuesday you will receive your box on Thursday.

  • Our products are sent to our customers frozen because when we started the business we looked into convenience for our customers. We found that sending the produce frozen meant that they could order for instance a month’s worth of produce and could go into their freezer until they are ready to use it. It also meant that there was less risk to the meat whilst been delivered as fresh meat can be delicate and risky.

  • All of our meat is butchered in house. In December 2018 our in-house butcher was built which means that we have full control of what is cut and also means that we can accommodate more requests from our customers.
