With our wild venison salami we've taken an all-time favourite cured meat and amped it up with some new flavours. The sweet-earthy flavour that comes from really top-quality venison is a perfect match for the traditionally long, slow curing process that gives salami its distinctive taste and texture. As the sausage matures in its skin, the meat tenderizes and soaks up the complementary flavours from the spices and seasonings. Because wild venison is some of the leanest meat you can get, we've balanced it out with pork fat to ensure succulence. The result is well-rounded and complex, the perfect addition to a deli platter.

Making really fine charcuterie is a labour of love and an art that we think is best done the old-fashioned way. That means no chemical preservatives and no artificial colourings or flavourings. The curing and drying process combined with natural ingredients are all that perfect salami needs. As well as organic, free-range meat, we add the distinctive flavours of fennel, juniper and garlic to our venison salami. This makes a pungent-fresh-grassy-citrussy combination that's a real knock out.  

Ingredients: 

*Pork (35%), *Venison (40%), *Pork Fat (20%), *Red Wine, *Salt, *Juniper Berries, *Garlic, *Black Pepper, *Brown Sugar, *Fennel. *Culture Preservative: Sodium NItrite.

  • We deliver all around mainland Britain, excluding the Highlands and Islands. You will be able to choose your preferred delivery slot at checkout.

  • We can deliver to you Tuesday to Saturday.

    We will pick, pack and deliver your box the day you have requested.

    For every order, we'll send you a text message on the morning it is due to be delivered.

    Our courier will leave it in your requested safe place if you would prefer a contactless delivery.

  • We have a minimum order of £40. There is no minimum order value or delivery charge if you collect from our farm shop

  • Our Standard Delivery Charge is £3.95 (Tuesday to Saturday). There is Free Delivery on Orders Over £90, Recieve your order Before 12pm for £6.95

  • No. You can leave a message with your order telling us where you would like to have your box placed. It would be best placed somewhere cool or at least in the shade – especially during the hotter months of the year. Our products will stay at the same temperature for up to 40 hours, so just make sure that you can pick up your order within that time.

    Our couriers will send you a text message or email, which ever you prefer, giving you an hour slot when your box will arrive. If that doesn’t suit you, some options will be provided to make your delivery more convenient.

  • Our products will stay frozen at the same temperature for up to 40 hours. Simply put them in your freezer after delivery or in your fridge if you want to defrost them and use them within the next few days.

    To keep your order frozen we use ice packs which will retain a low temperature for a long period of time. Reuse them for a picnic or simply snip, empty the water and pop in your plastic recycling.

     

    Sustainably Insulated

    We use paper pulp sheets to insulate the box. They are great for craft projects or can also simply be recycled with paper waste.

Product FAQs

  • We deliver our organic produce Tuesday – Saturday and you will be able to choose your preferred delivery day at checkout. The delivery charge is £3.95.

  • Produce like chorizo's and salami are made using cuts of meat that are firstly cured in a dry mix of sugar, salt, herbs and spices before being hung in a dry area allowing all the moisture to be drawn out of the meat.    

  • We recommend you store your chorizo and salami sticks in the refrigerator where they will be at hand to pep up any pasta recipe

While the best way to eat your organic venison salami is clearly lopped straight off the sausage and popped in your mouth without ceremony, there are more elegant ways of doing it. Let your salami come to room temperature then slice it as thinly as you can. A crisp crostini topped with venison salami and whipped goat's cheese is a triumph. You can take this happy partnership further and use it as a pizza topping, too. Or use your venison salami as an alternative to prosciutto in creamy pasta dishes or mellow frittatas. The tangy bite of baby cornichons is an excellent pairing with salami – team them up on a deli board with other cured meats, some creamy blue cheese and fresh figs. A glass of fruity Riesling or Zinfandel brings out the meat's fatty-nutty flavour.
