For those who like their fish with plenty of meaty oomph, sea bass is a great choice. These are predatory hunters, which makes them muscular and lean. Their thickset bodies yield pinkish-white flesh with tightly packed flakes that hold together well when cooked. This makes them an excellent fish to cook as a whole fillet or in stews and soups. Expect a delicate, buttery soft flavour and texture. The silvery skin crisps to crunchy perfection under the grill and its oils pass to the flesh on cooking, for added succulence.

Sea bass can be farmed, with mixed results. We prefer the wild variety. Taken from the sea, they're big and fit with good definition and flavour. As with any animal, a lifetime spent in activity results in characterful cuts. All of our sustainable fish comes from Brixham in Devon. The sea bass landed there has spawned and grown in the cold, clean waters of the English Channel. Our fishing partners follow strict stewardship guidelines regarding seasonality, the size of fish they take and the impact of fishing on the ocean environment.

As Coombe Farm sea bass is processed and frozen as soon as possible after landing, it's good enough to eat raw. It's freshness, coupled with the firmness of its flesh, mean it makes excellent sashimi or carpaccio. With a very sharp knife, slice the fish as thinly as possible and serve with a light dressing of lemon, herbs and capers. It makes an elegant, pared-back starter for a posh dinner. Sea bass is a good foil for robust accompaniments – try it with tomato-rich Mediterranean flavours or pair it with a zingy combo of chilli, lime and ginger.
