Forget about stock cubes – use these bones to make your own fish broth the thrifty, old-fashioned way
At Coombe Farm Organic, we don't chuck out our organic salmon frames (or salmon heads) once the fillets have been removed. That would be ridiculously wasteful. The skeletons and tails of the fish harbour a huge amount of flavour and they can deliver plenty of goodness when they're gently bubbled into a stock or broth. Homemade fish stock has a delicacy and purity that you don't get from stock cubes or pots and by making your own you can be certain what's gone into it. Which is ideal if you're keeping an eye on your intake of additives or salt.
Our head-to-hoof philosophy runs through everything we do here at Coombe Farm Organic. We respect every carcass that comes through our butchery and endeavour to make use of every single piece. This includes the bones, which are hidden powerhouses of flavour and can be used to add a whole other dimension to home cooking. Waste of all sorts is something we're committed to fighting, so across our operation we strive to recycle as much as possible, generate our own solar power and fertilise our fields using muck and wastewater from our dairy.

No. You can leave a message with your order telling us where you would like to have your box placed. Our products will stay at the same temperature for up to 40 hours, so just make sure that you can pick up your order within that time.
Our couriers will send you a text message or email, which ever you prefer, giving you an hour slot when your box will arrive. If that doesn’t suit you, some options will be provided to make your delivery more convenient.
Our products will stay frozen at the same temperature for up to 40 hours. Simply put them in your freezer after delivery or in your fridge if you want to defrost them and use them within the next few days.
At Coombe Farm we believe in sustainability. And we live it. Regarding our packaging:
Your delivery box is made of 100% recycled paper and is 100% recyclable.
To keep your order frozen we use ice packs which will retain a low temperature for a long period of time. Reuse them for a picnic or simply snip, empty the water and pop in your plastic recycling.
We use paper pulp sheets to insulate the box. They are great for craft projects or can also simply be recycled with paper waste.
We deliver our organic produce Tuesday – Saturday and you will be able to choose your preferred delivery day at the checkout. The delivery charge is £3.95.
Freezing is the most natural way of preserving food. And as here at Coombe Farm Organic we believe in slow-grown, healthy food, a form of preservation that doesn’t need artificial additives gets a big tick from us.
Fisheries catch fillet and freeze all sustainable and organic fish before it arrives to us by blast freezing. It’s done at the point of the fishmongers filleting the fish, to temperatures of -26°C. This locks in all the freshness, flavour and nutritional value and means you get the longest possible shelf life at home once you’ve defrosted it.
It also guarantees it will arrive with you in tiptop condition - confidently delivering fresh fish would be much more challenging.
Sustainability is a key concept when it comes to choosing the fish that you eat. It's measured in three ways. Firstly, the number of fish taken from the sea must leave behind a healthy, productive population that can reproduce quickly enough to support the levels at which they're fished. Secondly, environmental impact on habitats, ecosystems and other species must be minimised. And thirdly, fisheries must be well managed, be humane and be able to adapt to environmental changes. At Coombe Farm Organic, we work with fishing partners who fish to the Marine Stewardship Council (MSC) standards with a responsible attitude that reflects our organic farming ethos.
Can't Find the Answer?
If you cannot find the answer to your question and would like to speak to someone contact us and we will be happy to help.
When making stock or broth from your organic salmon frames you can choose to be super simple or get a bit fancier. The straightforward approach involves thoroughly washing your frames then putting them in a deep pan, covering them with water and letting them come to the very gentlest simmer. Let them bubble for at least half an hour, leaving them for a couple of hours if you want to maximise flavour. Just be careful to keep things low and ensure the water stays topped up.
If you want to add some additional flavours as you cook your broth, throw in some lemon peel or a stem of lemongrass for a subtle citrussy tang or add a bit of a kick with some slices of ginger. Parsley, dill or tarragon are good choices of herb to deliver complementary but delicate flavours.

So happy to be able to buy turkey all year round. Searched the web to find a source and was very pleased to find you. The minced turkey we have tried so far was excellent. Many thanks for the quick service.
The chicken bone broth is amazing. I wish I could say the same for the other items I bought. I didn't enjoy the bacon. It actually tasted a bit off and I threw the rest away. The turkey mince is good, but very, very expensive. I know it is impossible to do any other when you buy food online, but the amount of packaging needed to transport the items through the post really does put me off ordering again. If only I lived closer.
Order handled efficiently and arrived on time. Packaging of a high standard plus contents well wrapped in frozen ice packets plus extra blanket to ensure freshness.
Order included beef biltong packets but only of limited size/weight. Suggestion: Increase weight range rather than overpaying for small quantities! Delicious none the less!
