Organic Duck Carcass

The starting point for the very best stocks, soups and broths using nutritious bones

Even with the most careful butchery, there's always more than a smidgeon of meat left on a duck carcass and we don't think that should go to waste. Add to this the fantastic flavour that's stored in the bones and connective tissues and you have something that amounts to the best stock cube in the world. Just a little bit of effort will reward you with really fabulous flavour.

Why not mix it up a little and add an organic chicken carcass for extra tastiness?

At Coombe Farm Organic it's important to us that our business works hand in hand with the environment. So sustainability is high on our list of priorities. And part of that is our determination to minimise wastage. Our grandparents would never have thought of throwing away a carcass and neither do we. A huge amount of work goes into rearing our organic ducks and if we're going to slaughter an animal we want to ensure we make the best use of them.

Product FAQs

  • We deliver our organic produce Tuesday – Saturday and you will be able to choose your preferred delivery day at checkout. The delivery charge is £3.95.

  • Freezing is the most natural way of preserving food. And as here at Coombe Farm Organic we believe in slow-grown, healthy food, a form of preservation that doesn’t need artificial additives gets a big tick from us.

We use blast freezing to preserve all of our meat products. It’s done at the point of butchery, to temperatures of -26°C. This locks in all the freshness, flavour and nutritional value and means you get the longest possible shelf life at home once you’ve defrosted it.

It also guarantees it will arrive with you in tiptop condition - confidently delivering fresh meat would be much more challenging.

  • The poultry we sell has been organically reared they are free-range in smaller flocks than other birds, when the animal is ready it is slaughtered and butchered on the farm it was reared on so not to overstress the birds.

You will find any product ingredients on the relevant product pages.

    Can't Find the Answer?

If you cannot find the answer to your question and would like to speak to someone contact us and we will be happy to help.

The beauty of making your own bone stock is you can control exactly what goes into it. Pre-made liquid stocks and soups are packed with all sorts of things, not all of them always wholly natural. For a totally neutral base for soups and broths, simply cover your duck carcass with water, bring to the boil, then simmer (with the lid on) for a good couple of hours. You can add extra dimensions of flavour as you cook with the stock, in the knowledge that you're not doubling up on salt, for example.
