Simplicity is the key to the making and curing of our organic chorizo. We rely on just a few ingredients - prime pork meat and fat, paprika, black pepper, a pinch of salt and a sprinkling of brown sugar - that unite to create a distinctive, hearty flavour. This is a sausage with plenty of bite that holds its firm texture when sliced or cooked. We don't believe in adding unnecessary chemicals, additives or preservatives to our food so there are no nitrates and certainly no bulking agents in our chorizo.
If you're keeping it simple, enjoy your chorizo with some hard, tangy cheese and a fruity chutney. Try some membrillo - a sharp quince jelly - that's especially beloved by the Spanish. For a tapas classic, quickly fry together slices of chorizo, king prawns, garlic, chilli and chopped parsley. Serve sizzling from the pan with warm, soft bread. Alternatively, combine fry chopped chorizo with sliced potatoes, red peppers and onions until crisp and brown then top with a soft-yolked egg for a decadent brunch.
