Comprising the neck, liver and heart from the chicken carcass, organic chicken giblets from Coombe Farm are fantastic organ meats that really shouldn't go to waste. Most frequently used in making stocks, these tasty morsels add an unrivalled depth of flavour that beats any stock cube hands down. When breaking down carcasses for individual chicken cuts, our butchers set aside the giblets. They're then meticulously trimmed and packed together for your use. More versatile than you may think, giblets can add an extra dimension to burgers, meatballs and stews or eaten as you would any other offal.
The availability of prime meat has led us away from eating offal as much as our grandparents would have. At Coombe Farm we think that's a shame. Firstly because we really believe that if we slaughter an animal we should make good use of the carcass. And secondly because there's so much flavour to be enjoyed in these organs. All of our chicken giblets come from organic, free-range birds that are reared in a sustainable, environmentally friendly system. This means the giblets are clean, healthy and untainted by drugs or chemicals.
