There is really is no end to the ways in which you can use Coombe Farm organic diced chicken. Try threading chunks onto skewers and marinating in lime juice, chopped chilli, ginger and garlic before sizzling on a hot barbecue until the outside is crisp and the inside is tender and juicy. Or stir-fry with sugar snaps, spring onions and enoki mushrooms then serve with soft noodles and a splash of oyster sauce. For a quick but delicious pie, fry your diced chicken with some lardons, a handful of button mushrooms and some fresh thyme. Add some chicken stock and let it quickly reduce before stirring in a dollop of cream and seasoning to taste. Top with puff pastry and cook in a medium oven until golden.
