At Coombe Farm Organic we take our responsibilities as an organic food producer seriously. So even though wild fish can't be classified as organic, we still make sure we're sourcing a product that meets the highest standards of sustainability, welfare and environmental care. We work with suppliers based in Devon who fish in the cold, clean waters around the county, catching a diverse haul of seasonal species.
The delicacy of hake's flavour means you can be as simple or as complicated as you like with your accompaniments. Simple pan frying with brown butter, a squeeze of lemon and some chopped tarragon turns out simple but delicious results. Or turn to Spain for inspiration and pair your hake with a rich tomato sauce spiked with pimentón (paprika) and warmed with plenty of garlic. Add some chopped chorizo for an extra contrast of texture and serve over a bed of cannellini beans.
