Place the monkfish bones and fish trimmings into a pot. Add a knob of butter, a chopped onion, a handful of parsley, a squeeze of lemon juice and a pinch of salt and cook for five minutes.
Add water and a glass of white wine until the ingredients are covered. Simmer for a least 25 minutes and skim any foam from the top of the broth.
Pour the stock through a sieve and add salt to your liking. Use the stock in fish soups, pies and stews or in a seafood risotto or paella dish.
