There's quite a knack to making a good sausage: it can't be too dry or too fatty, too thick or too thin, too crumbly or too stodgy. That's why we test and retest all of our recipes, to make sure that we produce a consistently high standard of product time and again. Of course, working with the very best quality grass-fed, free-range beef doesn't hurt either. Our beef sausages will go down a storm when cooked on the barbecue over white-hot coals. Wrap them up in flatbreads with crispy leaves, a good spoonful of hummus and some hot jalapenos for an alternative to your standard burger. Or make a substantial brunch by pan-frying your sausages, adding some red onion, garlic and juicy fresh tomatoes, then bubbling over a medium heat until the tomatoes make a thick sauce. Scrape the tomatoes aside and crack an egg into the pan to fry. Season with chopped chives and some hot-as-you-dare chilli sauce.
